This is our easy delicious vegan twist for Alfredo sauce. The pesto in our tahini compliments the mushrooms and onions creating a dish. Loaded with flavor and nutrient dense creaminess. Sooo good and not a compromise in any way! Make it and never look back ;)
Ingredients
1 tablespoon EVOO
1 large onion sliced into strips
2 baskets of mushrooms of your choice (we used Baby Bella) - sliced thinly
1 Cup SoCo Tahini & Pesto
Water as needed
Directions
In a saucepan warm the EVOO
Sauté onions for 1-2 minute add the mushrooms and continue to sauté until a good amount of the mushroom fluid seeps out.
Add Tahini & Pesto
Add pasta cooking water as needed to create a creamier consistency
Pour over you favorite pasta
Enjoy!
