Ingredients
- 16 oz mushrooms (2 boxes)
- 1 onion diced
- 2 cloves garlic minced
- 1 package spaghetti noodles
- ¼ cup white wine (optional)
- 4 tablespoons EVOO
- ½ cup SoCo Tahini & Pesto (or 4 packets)
- ¼ cup pasta water
- Juice of 1 lemon
Directions
- In a heavy saucepan heat the oil to smoke point
- Add onions and saute for 30 seconds
- Season to taste with kosher salt
- Stir and continue to simmer for 2-3 minutes
- Add garlic and continue sauteing for 1 min
- Add slice mushrooms
- Season again to taste w/ kosher salt
- Cook mushrooms stirring occasionally for 5-7 min or until tender
- Add wine and continue cooking for 3-4 min
Add cooked pasta, tahini, water and lemon juice and stir until creamy and rich like an alfredo pasta sauce
