SoCo Classic Hummus Kit
1 small roasted beet OR 2 tbsp beetroot powder
2 tbsp roasted salted pistachios
Sprig of fresh mint
Optional drizzle of olive oil
Directions
Combine the precooked chickpeas from the hummus kit, 2 tbsp water, and the roasted beet (or beetroot powder) in a blender or food processor. Blend for about one minute.
Add the two packets of tahini from the hummus kit and blend for another minute until smooth.
Transfer the hummus to a serving bowl and garnish with roasted salted pistachios and very finely chopped fresh mint. If desired, add a small drizzle of olive oil for richness.
