These delicious no-bake Tahini bars are the ultimate sweet and healthy snack made with Tahini, fresh cashews and dates.
Time: 10 min prep and 30min freeze, Serves: 2
For the bars:
2 cups cashews
3 tbsp SoCo tahini
1 cup dates
2 tsp cinnamon
1 tsp cardamom
1 tsp vanilla extract
For the drizzle:
1 tbsp SoCo tahini
2 tsp coconut oil
Add all of the bar ingredients to a food processor and pulse until everything starts to come together. If it’s not coming together, add a splash of water and pulse again.
Pour the mixture into a parchment-lined baking dish and press down into one compact rectangle (about 1-inch thick).
Place in the freezer for 10 minutes, then cut into 8 bars.
To make the drizzle, mix together the SoCo Tahini, coconut oil, and maple syrup. Drizzle it on top of the bars and place back in the freezer for 20 minutes.
