Add all of the bar ingredients to a food processor and pulse until everything starts to come together. If it’s not coming together, add a splash of water and pulse again.
Pour the mixture into a parchment lined baking dish and press down into one compact rectangle (about 1-inch thick).
Place in the freezer for 10 minutes, then cut into 8 bars.
To make the drizzle, mix together the SoCo Tahini
, coconut oil, and maple syrup. Drizzle it on top of the bars and place back in the freezer for 20 minutes.
Enjoy straight out of the freezer for a quick snack or dessert!
